Super Bowl Snack-a-Thon

I love a good excuse to cook a feast!! I honestly had NO idea who was playing in the Super Bowl and have no clue how they got there, but gosh darn it I wanted to cook a meal for it!

I decided to cook something that was easy and wouldn’t have me chopping a 10,000 things, so off to my cookbooks I went on a hunt! I used three different cookbooks. Here’s how it went:

First, for the star of the show, I made “Shredded Beef Fajitas” from the cookbook “Dump Meals” LOL. No joke, that’s what its called! If I’m being totally honest, that’s the only reason I own this cookbook, because I saw it at the store and thought “Lord have mercy! I have to buy this!”. I simply could not walk away from a book named “DUMP MEALS”! You can find it here.

Despite its name, this book has some great recipes, this being one of them! I changed up the recipe a bit today by doubling it and I used Taco seasoning instead of Fajita seasoning because I’m one of those weirdo’s that doesn’t like cilantro. That thing about having a hereditary gene that makes cilantro tase like soap is no joke!! All you have to do to make these is put a pound and a half-ish flank steak, a pack of taco or fajita seasoning, one roughly chopped bell pepper, one roughly chopped onion, and one can of Rotel into a crock-pot. Set the crock pot on low for 8 hours and don’t touch it! If you open the lid at any time it will affect the cooking time greatly. This serves about 4 people.



Next up, Pioneer Woman’s “Eight Layer Dip”. I have yet to make anything by this woman that wasn’t good, and this followed suit as expected! I got this recipe from her cookbook “A Year of Holidays” under the section called “Food and Football”. You can find it here.

I made a few edits to this recipe as well. Her recipe called for black olives, jalapeños, and roasted corn. I’m not a fan of black olives so I left those out, I’m 97% sure I’m allergic to jalapeños so I left those out to avoid a hospital visit, and instead of roasting corn, I used a can of corn kernels. You guys, this is soooooo gosh darn good! It was a major crowdpleaser!

Next, I made your standard Super Bowl staple, Rotel Cheese Dip with Sausage. Guys, I’m from Arkansas, and in Arkansas we call it CHEESE DIP. If I say cheese dip in Texas, nobody knows what I’m talking about, here its called Queso. Now, in California, if you go into a Mexican restaurant and ask for “queso”, no joke, they will bring you a plate of shredded cheese. Lol love me some regional differences! I’m not going to tell you how to make this dip because its so easy, and if you haven’t made this or at least had it before, you’ve been living under a rock!

Last, but certainly not least, I made the “Chocolate Chip Cookies” from the Magnolia Table cookbook! Get this cookbook already would ya?! I didn’t make any changes to these and they were PERFECT! I felt bad even acting like I had anything to do with how good they were! The recipe says to let them cool for an hour before eating them, but guys, fresh out of the oven. I can’t even! Have you guys bought this book yet?!?!?!?!

And that’s it! The Super Bowl dinner was a great success and I still have no idea who won! What did you make for your Super Bowl soirée? Do you know who won?? Fill a girl in would ya?!
